Who can take part
- You’ve been on a gluten-free diet for at least 4 weeks
- You’re willing to eat gluten for the study
- If you’re in the celiac disease group, you have confirmed celiac diagnosis from blood tests and/or biopsy
- You are not pregnant
- You do not have a wheat allergy
- You don’t have type 1 diabetes and your BMI is not very low
