Brown rice vs white rice: effects on inflammation in sedentary workers

This study compares eating brown rice versus white rice to see how it affects levels of a molecule linked to inflammation (IL-6) and a marker of cell stress (MDA) in people who sit most of the day for work. If you are a healthy, sedentary office worker, you may help us understand if brown rice can improve your body's health after a meal.

Who can take part

  • You are a healthy office worker (sedentary) between 21 and 59 years old.
  • You have a normal body weight (BMI between 18.5 and 22.9).
  • You do very little physical activity -- less than about 150 minutes of moderate exercise per week.
  • You are not pregnant, breastfeeding, or menopausal.
  • You don't smoke, drink alcohol, or use herbal supplements or medicines within 24 hours of the study.
  • You have no history of diabetes, heart disease, cancer, or autoimmune diseases, and you are not vegan or allergic to rice foods.
