Effects of flavonoid-rich foods on carbonyl stress in healthy adults

This study tests whether eating foods rich in flavonoids (like green tea, apples, blueberries, soy milk, and pineapple) can reduce carbonyl stress, which is a type of cell damage linked to aging and chronic diseases. If you qualify, you'll be asked to follow a diet with these foods for a period, and yourblood and urine samples will be taken to measure changes.

Who can take part

  • You are between 25 and 70 years old.
  • Your BMI is between 18 and 30.
  • You have no allergies to green tea, apples, blueberries, soy milk, or pineapples.
  • You do not engage in high-intensity exercise.
  • You have not taken antibiotics in the last 6 months.
  • You are not currently taking any prescription drugs or flavonoid supplements.
  • You have not taken any drugs or supplements (including over-the-counter) within 3 weeks of the study start.
  • You are a nonsmoker.
  • You do not have a history of alcohol abuse or addiction.
  • You drink less than 3-4 alcoholic drinks per week (each drink being less than 2 glasses or 300 mL).
  • You do not consume alcohol within 3 weeks of the study start.
  • You have not had extended exposure to industrial wastes.
  • You do not have gout, heart disease, peripheral vascular disease, kidney disease, liver disease, diabetes, gastrointestinal disorders, or endocrine disorders.
  • You have not been diagnosed with cancer.
