  • Ages 18-35 if healthy, or 40-75 if you have type 2 diabetes
  • Body mass index between 18.5 and 27 (healthy) or under 31 (if diabetic)
  • No heart, kidney, liver, or stomach conditions
  • Not taking medications that affect blood sugar (like insulin or metformin, unless you have diabetes and are stable)
  • No allergies to wheat, chickpeas, gluten, or other bread ingredients
  • No recent major weight change or extreme exercise habits
