- Age 18–65 years old
- Blood pressure readings between 120–139 (systolic) and 80–89 (diastolic) — the elevated range, not yet high blood pressure
- Body Mass Index (BMI) under 30 — a measure of healthy weight
- Generally healthy with no serious heart disease, kidney problems, or uncontrolled diabetes
- Willing to stop blood-pressure-affecting medications and supplements for the study duration
- Non-smoker for at least 6 months; limited alcohol use
